  • 2 large eggs, room temperature
  • β…“ cup (80 ml) salted caramel sauce (store-bought or homemade)
  • Pinch of sea salt flakes
  • 1 tsp vanilla extract (optional)

Instructions

  1. Preheat your oven to 425Β°F (220Β°C). Place a baking tray in the oven to warm up.
  2. Grease two 6 oz (180 ml) ramekins thoroughly with butter, then dust with cocoa powder.
  3. Melt the chocolate and butter together using a double boiler or microwave in 30-second bursts, stirring until smooth.
  4. In a separate bowl, whisk the eggs, sugar, and vanilla extract until pale and slightly thickened, about 2-3 minutes.
  5. Gently fold the melted chocolate mixture into the egg mixture slowly to keep air in the batter.
  6. Sift the flour over the batter and fold in carefully until just combined.
  7. Pour half of the batter evenly into the two ramekins.
  8. Spoon about 2 tablespoons (30 ml) of salted caramel sauce into the center of each ramekin.
  9. Top with the remaining batter, smoothing the surface with a spatula.
  10. Place the ramekins on the preheated baking tray and bake for 12-14 minutes until edges are set but center jiggles slightly.
  11. Remove from oven and let rest for 1-2 minutes.
  12. Run a knife around the edges to loosen the cakes, then invert onto dessert plates.
  13. Sprinkle a pinch of sea salt flakes on top while warm.
