  • 1 teaspoon vanilla extract
  • 1 tablespoon milk (to thin frosting if needed)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 8-inch round cake pans and line the bottoms with parchment paper circles.
  2. In a blender or food processor, combine the packed spinach and whole milk. Blend until completely smooth, about 30 to 45 seconds. Set aside.
  3. In a medium bowl, whisk together the flour, matcha powder, baking powder, and salt until fully incorporated.
  4. In a large bowl, beat the softened butter and granulated sugar together with an electric mixer on medium speed until light and fluffy, about 3 to 4 minutes. Scrape down the sides halfway through.
  5. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Add the vanilla extract and almond extract, mixing until just combined.
  6. With the mixer on low speed, add about one-third of the flour mixture, then half of the spinach-milk mixture. Repeat with another third of flour, the remaining spinach-milk, and finish with the last of the flour. Mix just until combined. Fold a few times with a rubber spatula.
  7. Divide the batter evenly between the prepared pans (about 12 to 13 ounces per pan).
  8. Bake for 25 to 30 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. Start checking at 22 minutes if using 9-inch pans.
  9. Let the cakes cool in the pans for 10 minutes, then run a knife around the edges and turn them out onto a cooling rack. Remove the parchment paper and let cool completely, at least 30 minutes.
  10. While the cakes cool, make the frosting: Beat the softened cream cheese and butter together until smooth and creamy, about 2 minutes. Gradually add the sifted powdered sugar, one cup at a time, beating on low speed. Add the vanilla extract and beat until fluffy. If too thick, add the tablespoon of milk; if too thin, add more powdered sugar.
  11. Place one cake layer on a serving plate. Spread about ¾ cup of frosting evenly on top. Place the second layer on top, then frost the entire cake with the remaining frosting. Dust with extra matcha powder if desired.
