  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup beef broth
  • 1 large bag (1316 oz) restaurant-style tortilla chips
  • 2 cups shredded Mexican blend cheese
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) pinto beans, drained and rinsed
  • 1 cup sour cream
  • 1 cup pico de gallo or fresh salsa
  • 1 cup guacamole
  • ½ cup pickled jalapeños
  • ½ cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • ½ cup sliced black olives (optional)
  • ½ cup diced tomatoes
  • ¼ cup sliced green onions

Instructions

  1. Cook the ground beef: Heat olive oil in a large skillet over medium-high heat. Add diced onion and cook for 2-3 minutes until softened. Add ground beef, breaking it up with a wooden spoon. Cook until browned, about 5-7 minutes. Leave a little fat for flavor.
  2. Season the beef: Reduce heat to medium. Add minced garlic and cook for 30 seconds until fragrant. Stir in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Cook for 1 minute until spices are toasted. Pour in beef broth and simmer for 2-3 minutes, scraping up browned bits, until liquid mostly evaporates. Set aside and keep warm.
  3. Warm the beans: In a small saucepan or microwave, warm the drained black beans and pinto beans until heated through. Season with a pinch of salt.
  4. Prep the toppings: While beef cooks, spoon sour cream, salsa, and guacamole into separate bowls. Slice jalapeños, chop cilantro, dice tomatoes, and slice green onions. Arrange everything on a tray.
  5. Assemble the nacho base: Spread a single layer of tortilla chips on a large platter or sheet pan. Sprinkle half the shredded cheese over chips. Add half the warm beef and half the beans. Add another layer of chips, then remaining cheese, beef, and beans.
  6. Melt the cheese: If using an oven-safe platter, broil for 2-3 minutes until cheese is melted and bubbly. Watch closely.
  7. Set up the bar: Place the loaded chip platter in the center of the table. Surround with small bowls of toppings. Let everyone build their own plate.
  8. Serve immediately: Get nachos to the table while cheese is stretchy and chips are crunchy. Set out plenty of napkins.

Notes

Use sturdy restaurant-style tortilla chips to prevent sogginess. Layer cheese on the bottom and top to create a barrier. Keep wet toppings (salsa, sour cream, guacamole) separate for guests to add themselves. The seasoned beef tastes even better the next day—make it ahead to save time.
