Instructions

  1. In a mixing bowl, combine 4 tablespoons softened unsalted butter, 4 cloves minced garlic, lemon zest, lemon juice, dried thyme (if using), salt, and pepper. Mix well until evenly blended (about 5 minutes).
  2. Pat the 4 boneless, skinless chicken breasts dry with paper towels and place them in a single layer in the crockpot (about 2 minutes).
  3. Spoon the lemon garlic butter mixture evenly over the chicken breasts. Pour 1/2 cup chicken broth around the chicken to keep it moist, avoiding pouring directly on the butter mixture (about 3 minutes).
