  • 12 cups popped popcorn (about 1/2 cup unpopped kernels), plain, no butter or flavoring
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup (packed, 200g) brown sugar
  • 1/4 cup (60ml) light corn syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • Pinch of sea salt flakes, for sprinkling (optional but recommended)

Instructions

  1. Pop about 1/2 cup (100g) of kernels using your preferred method (air popper, stovetop, or microwave). Spread the popped popcorn into a large bowl, removing any unpopped kernels or burnt pieces. Aim for roughly 12 cups of fluffy popcorn.
  2. In a medium saucepan over medium heat, melt 1/2 cup (113g) of unsalted butter. Stir in 1 cup (200g) packed brown sugar, 1/4 cup (60ml) light corn syrup, and 1/2 teaspoon salt. Bring to a gentle boil, stirring constantly. Let it boil without stirring for 4-5 minutes until thickened and bubbling.
  3. Remove the pan from heat and quickly stir in 1/4 teaspoon baking soda and 1 teaspoon vanilla extract. The mixture will foam.
  4. Immediately pour the hot caramel over the popcorn. Use a wooden spoon or heatproof spatula to gently fold and coat the popcorn evenly without crushing it.
  5. Using two spoons, scoop portions of the coated popcorn onto a parchment-lined baking sheet, forming small bite-sized clusters (about 20-24 clusters).
  6. While still warm, lightly sprinkle sea salt flakes over the clusters.
  7. Allow the clusters to cool and harden at room temperature for 45 minutes to 1 hour until crunchy on the outside and chewy inside.

Notes

Use medium heat to avoid burning caramel. Stir gently when coating popcorn to keep clusters intact. Sea salt flakes are preferred for sprinkling. For extra crunch, bake clusters at 250°F (120°C) for 30 minutes, stirring halfway. Store in airtight container at room temperature up to 5 days; freeze for longer storage.
