  • 45 medium Kirby cucumbers, sliced into spears
  • 45 cloves garlic, peeled and smashed
  • 34 sprigs fresh dill or 2 tablespoons dill seeds
  • 2 jalapeño peppers, sliced thin
  • 1 ½ cups white vinegar (distilled)
  • 1 ½ cups water
  • 2 tablespoons pickling salt (kosher or sea salt, no iodine)
  • 1 tablespoon granulated sugar
  • 1 teaspoon black peppercorns (whole)
  • 1 teaspoon mustard seeds (optional)

Instructions

  1. Wash cucumbers thoroughly. Cut off the blossom ends and slice each cucumber lengthwise into 4-6 spears.
  2. Place 2-3 sprigs of fresh dill, 2 smashed garlic cloves, and half the sliced jalapeños into each quart-sized glass jar. Tightly pack the cucumber spears upright without crushing them.
  3. In a small saucepan, combine white vinegar, water, pickling salt, sugar, black peppercorns, and mustard seeds. Warm over medium heat, stirring until salt and sugar dissolve. Do not boil. Remove from heat and let cool slightly.
  4. Carefully pour the warm brine over the cucumbers in the jars, leaving about ½ inch headspace. Release any air bubbles by gently pressing the cucumbers. Wipe jar rims clean and seal tightly with lids.
  5. Place jars in the refrigerator. Pickles will be ready after 24 hours, with flavor deepening after 3 days. Consume within 2 weeks for best taste and crunch.

Notes

Use fresh Kirby cucumbers and remove blossom ends to keep pickles crunchy. Do not boil the brine; warm it just enough to dissolve salt and sugar. Adjust jalapeño slices to control heat. Store pickles in the refrigerator and consume within 2 weeks. For low sodium, reduce salt but note it may affect crunch.
