Soft Baked Pumpkin Donuts with Cinnamon Sugar

Cloud-soft, quick baked pumpkin donuts coated in cinnamon sugar. These donuts are moist, airy, and ready in about 20 minutes without the need for frying or rising time.

  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (120g) pumpkin puree
  • 1/2 cup (100g) granulated sugar
  • 1/4 cup (55g) unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup (100g) granulated sugar (for coating)
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons unsalted butter, melted (for coating)

Instructions

  1. Preheat oven to 350Β°F (175Β°C). Grease a mini muffin pan generously with non-stick spray or melted butter.
  2. In a medium mixing bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg.
  3. In a separate small bowl, combine the melted butter, pumpkin puree, egg, vanilla extract, and granulated sugar. Whisk until smooth.
  4. Pour the wet ingredients into the dry ingredients. Gently fold together with a spatula until just combined. Do not overmix.
  5. Fill mini muffin cups about 2/3 full with batter using a cookie scoop or spoon.
  6. Bake for 10-12 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  7. While donuts bake, mix the coating sugar, cinnamon, and nutmeg in a shallow bowl. Melt the 2 tablespoons of butter for coating.
  8. Remove donuts from the oven. While still hot, brush lightly with melted butter and roll in the cinnamon sugar mixture to coat.
  9. Cool on a wire rack for 5 minutes before serving.

Notes

Use canned pure pumpkin puree, not pumpkin pie filling. Do not overmix the batter to ensure a soft texture. Store in an airtight container at room temperature for up to 3 days. Do not refrigerate as it dries them out. For gluten-free, use a 1-to-1 gluten-free flour blend. For vegan, use a flax egg and coconut oil.
