  • 1 cup (240ml) milk (whole milk preferred, dairy-free alternatives like oat milk optional)
  • 1/4 cup (57g) unsalted butter, melted
  • 1 can (4 oz/113g) Hatch green chiles, diced
  • 1 cup (about 120g) sharp cheddar cheese, shredded
  • Optional: pinch of smoked paprika or cumin

Instructions

  1. Preheat your oven to 425Β°F (220Β°C). Place your cast-iron skillet in the oven while it heats for about 10 minutes.
  2. In a large bowl, whisk together cornmeal, all-purpose flour, baking powder, salt, and sugar until combined.
  3. In another bowl, beat the eggs, then whisk in the milk and melted butter (warm but not hot).
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined, leaving some lumps.
  5. Fold in the diced Hatch green chiles and shredded sharp cheddar cheese. Add smoked paprika or cumin if using.
  6. Carefully remove the hot skillet from the oven and coat the bottom with a small pat of butter or a light brush of oil.
  7. Pour the batter evenly into the skillet, spreading with a spatula. You should hear a sizzle as the batter hits the hot pan.
  8. Bake in the oven for 20-25 minutes until the top is golden brown and a toothpick inserted in the center comes out clean. Check at 20 minutes to avoid over-baking.
  9. Let the cornbread cool slightly in the skillet for about 10 minutes before slicing and serving.

Notes

Preheat the cast-iron skillet to get a crispy crust. Avoid over-mixing the batter to keep the cornbread tender. Drain canned green chiles if watery to prevent soggy batter. If edges brown too quickly, cover loosely with foil halfway through baking. For vegan or gluten-free versions, substitute ingredients as noted.
