  • 1 pound smoked kielbasa sausage, sliced into Β½-inch thick rounds
  • 2 cups white beans (canned cannellini or great northern beans), drained and rinsed
  • 1 medium red bell pepper, diced
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon smoked paprika
  • Β½ teaspoon dried thyme
  • ΒΌ teaspoon crushed red pepper flakes (optional)
  • A handful fresh parsley, chopped
  • Salt and black pepper to taste
  • 1 tablespoon freshly squeezed lemon juice
  • 1 cup cherry tomatoes, halved (optional)

Instructions

  1. Slice the kielbasa into Β½-inch thick rounds. Dice the red bell pepper and finely chop the onion. Mince the garlic and halve the cherry tomatoes if using. Rinse and drain the canned white beans. This should take about 10 minutes.
  2. Heat a large skillet over medium-high heat and add 2 tablespoons of olive oil. Warm until shimmering but not smoking, about 1-2 minutes.
  3. Add the sliced kielbasa in a single layer. Cook undisturbed for about 3 minutes to get a brown crust, then flip and cook another 2-3 minutes. Remove the sausage from the skillet and set aside.
  4. In the same skillet, add the chopped onion and red bell pepper. Cook for 5 minutes, stirring occasionally, until softened and the onion is translucent. Add the garlic and cook for another 30 seconds until fragrant.
  5. Sprinkle in smoked paprika, dried thyme, crushed red pepper flakes (if using), salt, and pepper. Stir well to coat the veggies. Add the white beans and cherry tomatoes, stirring gently to combine. Heat through for 3-4 minutes.
  6. Return the browned kielbasa slices to the skillet. Cook everything together for 2-3 minutes until warmed through and flavors meld.
  7. Remove the skillet from heat. Squeeze fresh lemon juice over the top and sprinkle with chopped parsley.
  8. Serve hot, ideally with crusty bread or a simple side salad.

Notes

Use smoked paprika for authentic smoky flavor. Don’t rush the sear on the kielbasa to develop a caramelized crust. Add lemon juice at the end to brighten the dish. If skillet seems dry, add a splash of water or broth. For vegetarian or vegan versions, substitute kielbasa with smoked tofu or tempeh and use vegetable broth.
