Instructions

  1. Slice 12 ounces of kielbasa into 1/4-inch thick rounds. Thinly slice about 4 cups of green cabbage and one medium yellow onion. Mince 2 garlic cloves. This prep should take about 5 minutes.
  2. Heat a 12-inch skillet over medium-high heat and add 2 tablespoons of olive oil. Once shimmering but not smoking, add the sliced kielbasa in a single layer. Let it cook undisturbed for 3-4 minutes to get a nice sear on one side.
  3. Flip the kielbasa slices and cook for another 2-3 minutes until both sides are golden and slightly crispy. Remove kielbasa to a plate and set aside.
  4. Reduce heat to medium, add 1 tablespoon of butter (optional), and toss in the sliced onions. Cook for 3 minutes until soft and translucent. Add the minced garlic and sauté for 30 seconds until fragrant, careful not to burn.
  5. Add the sliced cabbage to the skillet. Stir and cook for 5-6 minutes, stirring occasionally, until cabbage softens but retains a little bite and starts to caramelize around the edges.

  8. Drizzle 1 tablespoon of apple cider vinegar over the skillet. Give one last stir and cook for 1 minute to let the acidity brighten the dish.
  9. Remove from heat and garnish with freshly chopped parsley if desired. Serve hot straight from the skillet.
