  • 4 skin-on salmon fillets (about 6 ounces/170 grams each)
  • 1 large lemon, zested and juiced
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped fresh dill
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil (extra virgin preferred)
  • Salt and freshly ground black pepper to taste
  • Optional: pinch of red pepper flakes
  • Optional: 1 teaspoon honey

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides generously with salt and pepper (about ½ teaspoon salt and ¼ teaspoon pepper per fillet).
  2. In a small bowl, combine lemon zest, lemon juice, minced garlic, chopped parsley, dill, olive oil, and optional red pepper flakes or honey. Stir well to combine.
  3. Heat a non-stick skillet or cast iron pan over medium-high heat for about 2 minutes until hot.
  4. Place the salmon fillets skin-side down in the pan. Press gently with a spatula for about 10 seconds to prevent curling. Cook for 4-5 minutes without moving.
  5. Flip the salmon carefully and cook for another 3-4 minutes until the internal temperature reaches 125°F (52°C) and the salmon flakes easily.
  6. Pour the lemon herb mixture over the salmon fillets and let it bubble gently for about 1 minute to coat the fish.
  7. Remove the salmon from the pan and let it rest for 2 minutes before serving.

Notes

Patting the salmon dry is crucial for crispy skin. Use room temperature salmon for even cooking. Control heat to avoid burning garlic. Use a thermometer to ensure perfect doneness. Fresh herbs provide better flavor than dried. The lemon herb sauce can be made ahead and stored in the fridge.
