A fast and easy flatbread pizza topped with smoky BBQ chicken, melty mozzarella and cheddar cheese, and a crispy crust, perfect for busy weeknights or casual gatherings.

  • 2 large store-bought flatbreads (810 inches diameter)
  • 1 Β½ cups shredded or chopped cooked chicken (leftover grilled or rotisserie chicken)
  • Β½ cup smoky BBQ sauce
  • 1 cup shredded mozzarella cheese
  • Β½ cup sharp cheddar cheese, shredded
  • ΒΌ cup thinly sliced red onion (optional)
  • A handful chopped cilantro (for garnish)
  • 1 tablespoon olive oil (to brush flatbread)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to broil on high and position the oven rack about 6 inches from the top. Preheat for 10 minutes.
  2. In a mixing bowl, toss the shredded chicken with Β½ cup BBQ sauce until well coated, about 3 minutes.
  3. Lightly brush each flatbread on both sides with olive oil, about 2 minutes.
  4. Place flatbreads on a baking sheet. Spread the BBQ chicken evenly over each flatbread, leaving a small border around the edges.
  5. Sprinkle mozzarella and cheddar cheese over the chicken, then scatter red onions on top if using. This assembly takes about 5 minutes.
  6. Broil the pizzas for 3-5 minutes, watching closely until cheese bubbles and browns slightly and edges are crisp and golden.
  7. Remove pizzas carefully, sprinkle with chopped cilantro, add salt and pepper if desired, slice, and serve immediately.

Notes

Do not overload the flatbread with sauce or chicken to avoid sogginess. Brush flatbread with olive oil for extra crispiness. Watch the broiler closely to prevent burning. If edges brown too quickly, move rack down and increase cooking time slightly. Shred chicken finely for even heating. Assemble just before broiling to keep crust crisp.
