  • 2 cups frozen corn kernels (300g), thawed or lightly sautéed
  • 8 oz cream cheese (225g), softened
  • 1/2 cup sour cream (120ml)
  • 1/4 cup mayonnaise (60ml)
  • 1 tbsp fresh lime juice
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • Salt to taste
  • 1/2 cup grated Cotija cheese (60g), optional
  • 2 tbsp fresh cilantro, chopped
  • 2 green onions, sliced

Instructions

  1. If using frozen corn, thaw by leaving out for about 10 minutes or microwaving briefly. Optionally, heat a skillet over medium-high and sauté the corn for 4-5 minutes until lightly browned.
  2. Soften the cream cheese by letting it sit at room temperature for about 10 minutes or microwaving for 15 seconds without melting.
  3. In a medium bowl, combine softened cream cheese, sour cream, and mayonnaise. Stir until smooth and creamy.
  4. Add fresh lime juice, chili powder, garlic powder, and salt. Stir and adjust seasoning to taste.
  5. Fold in the prepared corn and grated Cotija cheese gently to keep some texture.
  6. Stir in chopped cilantro and sliced green onions.
  7. Taste and adjust salt or chili powder if needed.
  8. Transfer to a serving bowl and garnish with extra Cotija cheese and a sprinkle of chili powder if desired.

Notes

Softening the cream cheese before mixing ensures a smooth dip. Lightly sautéing the corn adds a smoky flavor reminiscent of street corn. Fresh lime juice is preferred for brightness. Adjust chili powder to your heat preference. The dip tastes better after chilling for an hour. Store leftovers in an airtight container in the refrigerator for up to 3 days and bring to room temperature before serving.
