A quick and easy grilled cheese sandwich featuring fresh mozzarella, ripe tomatoes, and basil, ready in just 15 minutes. Perfect for a satisfying lunch or light dinner with a fresh Italian twist.

  • 4 slices good-quality sourdough or Italian bread
  • 8 oz fresh mozzarella, sliced or torn into pieces
  • 1 large vine-ripened tomato, sliced thin
  • 810 fresh basil leaves, washed and patted dry
  • 2 tablespoons extra virgin olive oil
  • 12 tablespoons balsamic glaze
  • Salt and freshly cracked black pepper to taste
  • Optional: garlic powder or fresh garlic rub on bread before toasting

Instructions

  1. Slice the fresh mozzarella and tomato into thin, even slices. Wash and pat dry the basil leaves.
  2. Lay out two bread slices. On each, layer mozzarella slices, then tomato, and fresh basil. Season lightly with salt and freshly cracked pepper. Drizzle a small amount of balsamic glaze over the filling.
  3. Place the other slice of bread on top, press gently. Using a brush or spoon, spread olive oil evenly on the outside of both sandwich sides.
  4. Warm your skillet over medium heat for about 2 minutes until hot but not smoking.
  5. Place the sandwich in the skillet. Cook for about 3-4 minutes per side, pressing lightly with a spatula, until the bread is golden and crisp and the cheese is melted.
  6. If needed, cover the pan with a lid for the last minute or two to help the cheese melt evenly without burning the bread.
  7. Remove from skillet, let rest for a minute, then slice diagonally and serve warm.

Notes

Let mozzarella sit at room temperature for 10 minutes before assembling to help it melt faster. Use medium heat to avoid burning bread before cheese melts. Press sandwich lightly when cooking to keep filling intact. Optionally rub garlic on bread before oiling for extra flavor. Cover pan with lid during last minute of cooking to speed melting.
