  • 2 cups water
  • 1 large egg (room temperature preferred)
  • 1 tablespoon unsalted butter
  • 1 clove garlic, thinly sliced
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil (toasted preferred)
  • 1 teaspoon chili crisp or sriracha (optional)
  • 1 green onion, sliced
  • 1 teaspoon sesame seeds (toasted)
  • Pinch of red pepper flakes (optional)
  • Handful of fresh spinach or bok choy (optional)
  • 23 slices leftover rotisserie chicken or cooked pork (optional)
  • 1 sheet nori (seaweed), torn into pieces (optional)
  • 1 teaspoon miso paste (optional)

Instructions

  1. Boil the egg: Bring a small pot of water to a rolling boil. Gently lower the egg into the water using a slotted spoon. Set a timer for exactly 6 minutes and 30 seconds for a perfect soft-boiled egg with a runny yolk. While it cooks, prepare an ice bath (a bowl of cold water with a few ice cubes). When the timer goes off, transfer the egg to the ice bath to stop the cooking process. Let it sit for at least 2 minutes before peeling.
  2. Cook the noodles: In the same pot of boiling water (or a fresh one if you prefer), add the instant ramen noodles. Cook according to package directions—usually about 3 minutes. Cook just until tender but still with a slight bite. Drain the noodles, reserving about 1/4 cup of the cooking water. Do not rinse.
  3. Make the garlic chips: While the noodles cook, heat the butter in a small skillet over medium heat. Add the thinly sliced garlic and cook, stirring frequently, until golden brown and fragrant—about 2 minutes. Remove from the pan with a slotted spoon and set aside on a paper towel.
  4. Prepare the sauce: In the same skillet with the remaining butter, add the soy sauce, sesame oil, and chili crisp (if using). Stir to combine and let it bubble for about 30 seconds. If the mixture seems too thick, add a tablespoon of the reserved noodle water to thin it out.
  5. Assemble the bowl: Place the drained noodles in your serving bowl. Pour the sauce over the noodles and toss gently to coat evenly. Peel the soft-boiled egg and slice it in half lengthwise. Place the egg halves on top of the noodles.
  6. Add the toppings: Sprinkle the crispy garlic chips over the noodles. Garnish with sliced green onion, sesame seeds, and a pinch of red pepper flakes if desired. If using nori, tear it into small pieces and scatter on top. Serve immediately.

Notes

For best results, use fresh garlic for crispy chips. Don’t skip the ice bath for the egg—it makes peeling easier and stops the yolk from overcooking. Eat immediately for optimal texture. To make vegan, skip the egg and butter, and add a splash of coconut milk for creaminess. For gluten-free, use rice noodles and tamari instead of soy sauce.
