A sophisticated yet easy fall brunch drink that combines warm, spiced apple cider with cold, crisp sparkling wine for a rich and aromatic experience.

  • 2 cups apple cider (fresh or high-quality bottled, unfiltered preferred)
  • 2 whole cinnamon sticks
  • 45 whole cloves
  • 1 pod star anise (optional)
  • 1 bottle (750ml) dry sparkling wine or Prosecco
  • Orange peel strips (for garnish)
  • Ice cubes

Instructions

  1. Pour 2 cups of apple cider into a small saucepan.
  2. Add cinnamon sticks, cloves, and star anise (if using) to the saucepan.
  3. Place the pan over medium-low heat and warm the cider gently; do not boil.
  4. Let the cider simmer gently for 10-15 minutes to infuse the spices, stirring occasionally.
  5. Remove the saucepan from heat and strain the cider through a fine-mesh strainer into a heat-safe pitcher, discarding the spices.
  6. Ensure the sparkling wine is very cold (straight from the refrigerator or chilled in the freezer for 15 minutes).
  7. Fill champagne flutes with ice.
  8. Pour the warm spiced cider into the glass until it is about one-third full.
  9. Slowly pour the cold sparkling wine over the top to preserve carbonation.
  10. Twist a strip of orange peel over the glass to release oils, rub it on the rim, and drop it in as garnish.
  11. Serve immediately.

Notes

Do not boil the cider as it will evaporate delicate flavors. The cider should be warm, not scalding. For a large batch, keep the spiced cider warm in a slow cooker and mix with chilled wine just before serving. Cloves are potent; start with 4-5 to avoid a medicinal taste.
