  • ¼ cup (60ml) cold water
  • 1 cup (200g) granulated sugar
  • ½ cup (130g) sweetened condensed milk
  • 1 cup (180g) white chocolate chips
  • Food coloring gels: deep blue, purple, black, silver
  • Optional: edible glitter or stars
  • Optional: whipped cream or buttercream

Instructions

  1. Preheat oven to 350°F (175°C). Line a standard muffin tin with cupcake liners.
  2. In a medium bowl, sift together flour, sugar, baking powder, and salt. Set aside.
  3. In a large bowl, beat softened butter until creamy, about 2 minutes. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract.
  4. Alternate adding dry mixture and milk to the butter-egg mixture, starting and ending with dry ingredients. Mix gently until just combined, about 3–4 minutes.
  5. Spoon batter evenly into liners, filling about ⅔ full. Bake for 18–20 minutes or until a toothpick inserted comes out clean.
  6. Let cupcakes cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
  7. Sprinkle gelatin powder over cold water and let bloom for 5 minutes.
  8. In a saucepan over medium heat, combine sugar, sweetened condensed milk, and bloomed gelatin. Stir gently until sugar dissolves and mixture is hot but not boiling, about 5 minutes. Remove from heat.
  9. Add white chocolate chips to the hot mixture. Let sit for 2 minutes, then stir until smooth and glossy.
  10. Let glaze cool until slightly thickened but still pourable (around 90°F or 32°C). Divide into small bowls and mix in gel colors to create galaxy shades. Swirl colors gently.
  11. Place cupcakes on a wire rack over a baking sheet. Pour glaze over each cupcake, letting colors swirl naturally. Work quickly, about 10 minutes.
  12. Let glaze set at room temperature for 15–20 minutes. Add edible glitter or stars if desired, then chill for 30 minutes to firm glaze before serving.
