  • Pinch of salt
  • 1/2 cup (75 g) patriotic sprinkles (red, white, and blue nonpareils or jimmies)
  • Extra butter or vegetable oil for hands

Instructions

  1. Combine sweetened condensed milk, cocoa powder, softened butter, vanilla extract, and a pinch of salt in a medium non-stick saucepan. Stir gently until smooth before heating.
  2. Cook the mixture over medium-low heat, stirring constantly with a wooden spoon or silicone spatula for 10-15 minutes until thickened and pulling away from the pan’s surface.
  3. Check consistency by running the spatula through the mixture; it should leave a clear trail that stays separated for a few seconds. If using a candy thermometer, aim for about 220Β°F (104Β°C).
  4. Transfer the mixture to a buttered plate or shallow dish, spread evenly, and let cool to room temperature (about 1 hour). Refrigerate to speed cooling if desired, but avoid letting it get too hard.
  5. Butter your hands or use vegetable oil to prevent sticking. Pour sprinkles into a shallow bowl for rolling.
  6. Scoop about 1 tablespoon (15 ml) of the cooled mixture and roll quickly between palms into smooth balls. Roll each ball in sprinkles until fully coated, then place on a lined tray or plate.
  7. Refrigerate the coated truffles for at least 30 minutes before serving to firm up.

Notes

Stir constantly during cooking to prevent scorching. Butter or oil your hands to prevent sticking when rolling. If mixture becomes too sticky, chill briefly before rolling.
