  • 1 teaspoon pure vanilla extract
  • 2 cups (250g) all-purpose flour

  • 1 tablespoon dried culinary lavender buds, finely chopped
  • 1/2 cup black raspberry jam
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper or silicone baking mats.
  2. In a large bowl, beat 1 cup softened unsalted butter and 2/3 cup granulated sugar with a hand or stand mixer on medium speed until light and fluffy, about 3-4 minutes.
  3. Add 1 large room-temperature egg and 1 teaspoon pure vanilla extract. Beat until fully combined, scraping the sides of the bowl as needed.
  4. In a separate bowl, whisk together 2 cups all-purpose flour, 1/2 teaspoon salt, and finely chopped 1 tablespoon culinary lavender buds. Gradually add this to the butter mixture on low speed, mixing just until the dough comes together.
  5. Using a 1-inch cookie scoop or tablespoon, portion out dough balls onto the prepared baking sheets about 2 inches apart. Press your thumb or the back of a teaspoon gently into the center of each ball to create an indentation.
  6. Spoon about 1/2 teaspoon of black raspberry jam into each indentation. Warming the jam slightly is optional.
  7. Bake for 14-16 minutes, rotating halfway through if needed, until edges are lightly golden but centers remain pale.
  8. Let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  9. Once cooled, dust lightly with powdered sugar if desired.

Notes

If dough is too soft, chill for 10-15 minutes before scooping. Do not overfill jam to prevent leaking. Use food-grade dried lavender finely chopped for best flavor. For gluten-free, substitute flour with 1:1 gluten-free blend. For dairy-free, use solid coconut oil or vegan butter but expect slight flavor changes.
