A quick and elegant appetizer featuring roasted strawberries with balsamic vinegar, creamy goat cheese, and toasted baguette slices. Perfect for entertaining with a sophisticated yet simple flavor combination.

  • 2 cups fresh strawberries, hulled and halved
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 4 ounces goat cheese, softened
  • 1 French baguette, sliced into ½-inch thick pieces
  • 2 tablespoons olive oil
  • 1 teaspoon fresh thyme, chopped (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the halved strawberries, balsamic vinegar, honey, and a pinch of salt and pepper. Toss gently to coat all berries evenly.
  3. Spread the coated strawberries in a single layer on a rimmed baking sheet. Roast for 15 to 20 minutes, stirring once halfway through, until the strawberries are soft and syrupy but not mushy.
  4. While strawberries roast, slice the baguette into ½-inch thick pieces. Brush each slice lightly with olive oil on both sides.
  5. Place the slices on another baking sheet or toaster oven rack. Toast in the oven at 400°F (200°C) for 8 to 10 minutes, flipping halfway, until golden and crisp.
  6. Once toasted, spread about 1 tablespoon of softened goat cheese on each crostini. Optionally, put the cheese-topped crostinis back in the oven for 1-2 minutes to melt slightly.
  7. Spoon a generous amount of the warm roasted strawberries over each crostini.
  8. Sprinkle chopped fresh thyme over the top for garnish and serve immediately.

Notes

If goat cheese is too firm, microwave for 10 seconds to soften before spreading. Avoid overcrowding strawberries on the baking sheet to ensure caramelization. Toast bread last or keep warm to prevent sogginess. Roasted strawberries can be made up to 3 days ahead and stored refrigerated.
