A stress-free, make-ahead breakfast casserole featuring fluffy eggs, savory sausage, and sharp cheddar cheese on day-old bread. Perfect for busy mornings, brunches, and feeding a crowd.

  • 1 pound bulk pork sausage (sage and pepper blend preferred)
  • 1 large loaf day-old French bread or baguettes, cut into 1-inch cubes
  • 2 tablespoons unsalted butter
  • 10 large eggs
  • 1 cup heavy cream
  • 1 cup whole milk
  • 2 cups shredded sharp cheddar cheese
  • 1 medium yellow onion, diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt

Instructions

  1. Heat a large skillet over medium heat and melt the butter. Add the sausage and cook until browned, breaking it up with a spoon. Add the diced onions during the last 3 minutes of cooking. Drain excess grease if necessary and set aside to cool slightly.
  2. Cut the day-old bread into 1-inch cubes and spread them into a 9×13 inch baking dish.
  3. Sprinkle the cooked sausage and onion mixture evenly over the bread cubes, followed by the shredded cheddar cheese.
  4. In a large mixing bowl, whisk together the eggs, heavy cream, whole milk, garlic powder, black pepper, and salt until frothy.
  5. Slowly pour the egg mixture over the bread, sausage, and cheese. Gently press down on the bread with a spatula to ensure all cubes are submerged. Let sit for 1 minute.
  6. Cover the dish tightly with plastic wrap or aluminum foil and refrigerate for at least 4 hours, ideally overnight (8-12 hours).
  7. Preheat oven to 350Β°F (175Β°C). Remove plastic wrap and cover the dish with aluminum foil. Bake for 30 minutes.
  8. Remove the foil and bake for another 15-20 minutes, or until the top is golden brown and the center is set (test with a knife).
  9. Remove from oven and let rest for 10 minutes before cutting into squares and serving.

Notes

Use day-old bread to prevent sogginess; if using fresh bread, toast cubes first. For gluten-free, swap bread for gluten-free bread or hash browns. For dairy-free, use plant-based alternatives. Can be frozen unbaked for up to 3 months.
