Ingredients

  • Flour tortillas (8-inch size works best for rolling)
  • Thinly sliced turkey breast (about 6-8 slices)
  • Cream cheese, softened (plain or herb-flavored)
  • Dijon mustard
  • Fresh spinach leaves (washed and dried)
  • Shredded cheddar cheese (optional, about 1/4 cup)
  • Fresh chives or parsley, finely chopped (about 1 tablespoon)
  • Apple (one medium, peeled and chopped)
  • Greek yogurt (1/2 cup)
  • Ground cinnamon (1 teaspoon)
  • Honey or maple syrup (1 tablespoon)
  • Vanilla extract (1/2 teaspoon)
  • Fresh lemon juice (a squeeze)
  • Baby carrots or cucumber slices (for crunch)
  • Mixed nuts or seed trail mix (optional)
  • Small container or silicone cup for dip

Instructions

  1. Prepare the Apple Cinnamon Dip: In a mixing bowl, combine 1/2 cup Greek yogurt, 1 teaspoon ground cinnamon, 1 tablespoon honey, 1/2 teaspoon vanilla extract, and a small squeeze of fresh lemon juice. Stir well until smooth. Set aside.
  2. Chop the Apple: Peel and dice the apple into small, bite-sized pieces (about 1/4 inch). Add the chopped apple to the yogurt mixture and gently fold to coat. Optionally, warm the dip slightly in the microwave for about 20 seconds to enhance cinnamon aroma, but do not overheat.
  3. Mix the Pinwheel Spread: In a small bowl, combine 3 tablespoons softened cream cheese, 1 teaspoon Dijon mustard, and finely chopped chives or parsley (about 1 tablespoon). Mix until creamy and well-blended.
  4. Assemble the Pinwheels: Lay out one flour tortilla flat. Spread a thin, even layer of the cream cheese mixture over the entire surface. Lay 2-3 slices of turkey breast evenly on top, then add a handful of fresh spinach leaves and sprinkle with shredded cheddar cheese if using. Roll the tortilla tightly, then slice into 1-inch pinwheels. Repeat with remaining tortillas.
  5. Pack the Bento Box: Place turkey pinwheels neatly in one compartment. Add baby carrots or cucumber slices in another. Spoon the apple cinnamon dip into a small container or silicone cup and place it next to the pinwheels. Toss a handful of mixed nuts or trail mix into a separate section if desired.

Notes

[‘Soften cream cheese before spreading to avoid tearing tortillas.’, ‘Roll tortillas tightly but gently to prevent filling from squeezing out.’, ‘Warm tortillas briefly in microwave wrapped in damp paper towel if cracking.’, ‘Keep apple cinnamon dip cool and pack separately to avoid soggy pinwheels.’, ‘Chop apple pieces about 1/4 inch for best texture and ease of dipping.’, ‘Assemble pinwheels and dip separately if prepping ahead; combine just before serving.’]
