Soft, custard-like baked oatmeal cups made with pumpkin puree and warm spices. These make-ahead snacks are perfect for breakfast or dessert, offering a moist texture that avoids the dryness of traditional baked oatmeal.

  • ½ cup pumpkin puree (100% pure, not pie filling)
  • 2 large eggs, room temperature
  • ¾ cup milk (dairy or plant-based)
  • 3 tablespoons maple syrup
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons cinnamon
  • ½ teaspoon nutmeg
  • ¼ teaspoon ginger
  • ¼ teaspoon cardamom
  • ½ teaspoon salt
  • Optional mix-ins: ¼ cup chopped walnuts, ¼ cup dried cranberries, or ¼ cup dark chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Grease a 12-cup muffin tin with cooking spray or butter, or line with paper liners.
  3. In a large bowl, whisk together eggs, pumpkin puree, milk, maple syrup, and vanilla extract until smooth.
  4. Add rolled oats, cinnamon, nutmeg, ginger, cardamom, and salt to the wet mixture. Stir until oats are coated.
  5. Let the mixture rest in the bowl for 10-15 minutes to allow oats to hydrate.
  6. Fold in optional mix-ins (walnuts, cranberries, or chocolate chips) if using.
  7. Divide batter evenly among the 12 muffin cups (about ¼ cup per cup).
  8. Bake for 20-25 minutes until edges are set and slightly golden, but centers still have a slight jiggle.
  9. Cool in the tin for at least 10 minutes, then transfer to a wire rack to cool completely before storing or eating.

Notes

Do not use instant or steel-cut oats. The resting period is crucial for texture. Do not overbake; the centers should wobble slightly when removed from the oven as they will firm up while cooling. Best stored in an airtight container in the fridge for up to 5 days or frozen for up to 3 months.
