These healthy no-bake granola bars are a quick, nutritious, and delicious snack made with simple pantry ingredients. Ready in just 5 minutes of prep, they’re perfect for busy days and naturally sweetened with honey.

  • 1/2 cup creamy peanut butter
  • 1/3 cup honey
  • 1/4 cup dark chocolate chips
  • 2 tablespoons chia seeds
  • 1/4 cup unsweetened shredded coconut (optional)
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Line an 8×8-inch baking pan with parchment paper, leaving overhang on two opposite sides.
  2. In a large mixing bowl, combine rolled oats, chia seeds, shredded coconut (if using), and a pinch of salt. Stir to combine.
  3. In a small saucepan over low heat, warm peanut butter and honey together, stirring constantly until smooth and slightly runny (about 2 minutes). Do not let it boil. Remove from heat and stir in vanilla extract.
  4. Pour the warm peanut butter mixture over the dry ingredients. Fold together with a spatula until all oats are coated. The mixture should be glossy and sticky but not wet. Adjust with a teaspoon of warm water if too dry, or a tablespoon of oats if too wet.
  5. Gently fold in dark chocolate chips until evenly distributed.
  6. Transfer the mixture to the lined pan. Press down firmly and evenly using the back of a spatula or a flat measuring cup. Spend about a minute compacting it well.
  7. Refrigerate for at least 2 hours (or 1 hour in the freezer) until firm.
  8. Lift the block out using the parchment overhang, place on a cutting board, and slice into 12 even bars with a sharp knife. Wipe the knife between cuts for clean edges.

Notes

Press the mixture firmly into the pan to prevent crumbling. Chill for at least 2 hours for best results. For a vegan version, use maple syrup instead of honey and dairy-free chocolate chips. For a nut-free version, use sunflower seed butter. Store in an airtight container in the refrigerator for up to 2 weeks, or freeze individually wrapped bars for up to 3 months.
