A fun and easy game day appetizer featuring tortilla chips arranged in a football helmet shape, loaded with seasoned meat, melted cheese, and fresh toppings. Perfect for feeding a crowd and guaranteed to be a conversation starter.

  • 1 large bag (1316 oz) tortilla chips, restaurant-style or thick-cut
  • 3 cups shredded Mexican blend cheese
  • 1 cup shredded cheddar cheese
  • 1 lb ground beef or chorizo
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup pickled jalapeños, drained
  • 1 cup pico de gallo or salsa
  • 1/2 cup sour cream
  • 1 cup guacamole or sliced avocado
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup green onions, sliced
  • 1/2 cup cherry tomatoes, halved
  • 2 tablespoons taco seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Line a large sheet pan with aluminum foil or parchment paper.
  2. In a skillet over medium-high heat, brown 1 lb ground beef or chorizo, breaking it up with a spatula. Cook for 6-8 minutes until fully cooked. Drain excess fat. Stir in 2 tablespoons taco seasoning and 1/4 cup water. Simmer for 2-3 minutes until thickened. Set aside.
  3. Arrange tortilla chips on the sheet pan in the shape of a football helmet: start with an oval base, wider at the top and narrower at the bottom. Build up the sides slightly to create a rounded dome. Leave a small indent near the bottom front for the face mask area.
  4. Sprinkle half of the shredded Mexican blend cheese evenly over the chips. Scatter the seasoned meat and black beans (if using) across the top. Add pickled jalapeños. Finish with remaining Mexican blend cheese and shredded cheddar.
  5. Bake for 10-12 minutes, until cheese is fully melted and bubbly. Watch closely to avoid burning.
  6. Remove from oven and let cool for 2-3 minutes. Top with pico de gallo, sour cream (dolloped with a spoon), guacamole or avocado slices, fresh cilantro, green onions, and cherry tomatoes.
  7. Serve immediately from the sheet pan with small plates and napkins.

Notes

For best results, use thick, sturdy tortilla chips to prevent sogginess. Let cheese sit at room temperature for 10-15 minutes before baking for even melting. If making ahead, bake without fresh toppings and add them just before serving. Leftovers: separate chips from toppings before storing; reheat meat and cheese mixture in a skillet or microwave, then add fresh chips and toppings.
