A refreshing summer salad combining sweet watermelon, tangy feta, fresh mint, and a zesty lime dressing. Perfect for light lunches, barbecues, or picnics.

Ingredients

  • 4 cups seedless watermelon, cubed
  • 1 cup feta cheese, crumbled
  • ¼ cup fresh mint leaves, finely chopped or torn
  • Juice of 1 large lime (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • Pinch of sea salt (optional)
  • Freshly ground black pepper, to taste

Instructions

  1. Cut about 4 cups of seedless watermelon into bite-sized cubes.
  2. Rinse and pat dry a handful of fresh mint leaves, then finely chop or tear about ¼ cup.
  3. In a small bowl, whisk together 2 tablespoons of extra virgin olive oil with the juice of 1 large lime (about 2 tablespoons). Add a pinch of sea salt and a few grinds of black pepper. Taste and adjust seasoning if needed.
  4. In a large mixing bowl, gently toss the watermelon cubes, crumbled feta, and chopped mint.
  5. Pour the lime-olive oil dressing over the salad and toss lightly again to coat everything evenly.
  6. Let the salad rest in the refrigerator for 10-15 minutes before serving, or serve immediately if short on time.

Notes

Use fresh lime juice for best flavor; bottled lime juice dulls brightness. If feta is too salty, rinse briefly under cold water and pat dry. Drain excess watermelon juice if too watery. Serve immediately or chilled. For prepping ahead, keep dressing separate and toss just before serving to avoid sogginess.
