  • 16 oz (450 g) cottage cheese (full-fat or low-fat)
  • 2 tbsp honey (raw wildflower honey recommended)
  • 1 tsp vanilla extract
  • 1 cup (150 g) fresh strawberries, sliced
  • 1 cup (150 g) fresh blueberries
  • Β½ cup (75 g) fresh raspberries
  • 1 tbsp chia seeds (optional)

Instructions

  1. Rinse and dry the berries well. Slice the strawberries into thin, even slices and pat raspberries dry gently.
  2. In a mixing bowl, combine cottage cheese, honey, and vanilla extract. Stir gently until smooth but still slightly textured.
  3. If using, fold in chia seeds for added crunch and fiber.
  4. Line a baking sheet or shallow tray with parchment paper.
  5. Spread the cottage cheese mixture evenly into a rectangle about Β½ inch (1.25 cm) thick on the lined tray.
  6. Scatter the sliced strawberries, blueberries, and raspberries evenly on top, pressing lightly to stick.
  7. Freeze the bark for at least 2 hours until firm but not rock-hard.
  8. Lift the parchment paper and break the bark into irregular pieces. Serve immediately or store in a freezer-safe container for up to one week.

Notes

Do not overblend the cottage cheese to keep some texture. Use ripe, fresh berries and pat them dry to avoid sogginess. Press berries gently into the mixture to help them stick during freezing. Freeze on a flat surface for even setting. Work quickly when spreading the mixture to prevent separation. For dairy-free, substitute cottage cheese with coconut or almond yogurt. Frozen berries can be used if thawed and drained well.
