  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tablespoon red wine vinegar (optional)

Instructions

  1. Prepare the Basil Oil: Rinse and dry 1 cup of fresh basil leaves thoroughly. Combine basil and Β½ cup of extra virgin olive oil in a blender or food processor. Blend on high until smooth and vibrant green, about 30 seconds. If too thick, add a teaspoon more olive oil. Set aside.
  2. Dice the Tomatoes: Wash and pat dry 2 cups of heirloom tomatoes. Cut into bite-sized pieces, removing any excess juice or seeds to avoid sogginess. Place diced tomatoes in a bowl.
  3. Season the Tomatoes: Add 1 tablespoon red wine vinegar (optional), a pinch of sea salt, and freshly ground black pepper to the tomatoes. Stir gently to combine. Let sit for 5 minutes to marry flavors.
  4. Toast the Bread: Slice your baguette into Β½-inch thick pieces. Heat a grill pan or skillet over medium heat. Toast slices for about 2 minutes per side until golden and crisp. Alternatively, place on a baking sheet under a broiler for 1-2 minutes per side.
  5. Rub with Garlic: While the bread is still warm, gently rub each slice with the peeled garlic clove.
  6. Assemble the Bruschetta: Tear or spoon creamy burrata cheese onto each toast slice. Top with a generous spoonful of the seasoned heirloom tomatoes.
  7. Drizzle Basil Oil: Finish by drizzling the fresh basil oil over each bruschetta. Add a final sprinkle of flaky sea salt and a few torn basil leaves for garnish.
  8. Serve Immediately: Enjoy right away while the bread is crispy and the flavors are fresh.

Notes

Do not blend basil oil too long to avoid bitterness; pulse instead. Avoid overloading bread with tomatoes to prevent sogginess. Rub bread gently with garlic for subtle flavor. Serve immediately for best texture. Basil oil and seasoned tomatoes can be made a day ahead and refrigerated separately.
