Instructions

  2. In a medium bowl, whisk together 1/4 cup extra virgin olive oil, 3 tablespoons fresh lemon juice, minced garlic, chopped parsley, basil, thyme, salt, pepper, and red pepper flakes if using.   3. Add the sliced squash to the bowl and toss gently to coat each piece evenly. Let it marinate at room temperature for 15 minutes to tenderize and infuse flavor. (15 minutes)
