  • 1 medium ripe avocado, mashed with some texture
  • 2 large eggs
  • 1 teaspoon fresh lemon juice
  • Everything bagel seasoning (store-bought or homemade with sesame seeds, poppy seeds, dried garlic, onion flakes, and salt)
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Extra virgin olive oil, optional drizzle
  • Optional: pinch of red pepper flakes
  • Optional: chopped fresh herbs like chives or parsley

Instructions

  1. Fill a medium saucepan with water to cover eggs by about 1 inch (4-5 cups). Bring to a gentle boil over medium heat.
  2. Carefully lower eggs into boiling water using a slotted spoon. Set timer for 6 minutes for soft-boiled eggs with set whites and runny yolks.
  3. While eggs cook, cut avocado in half, remove pit, scoop flesh into a small bowl, and mash lightly with a fork leaving some texture.
  4. Stir in fresh lemon juice, a pinch of sea salt, and freshly ground black pepper. Set aside.
  5. As eggs near done, slice bagels in half and toast until golden and crisp (2-3 minutes in toaster or 4-5 minutes under broiler).
  6. When timer goes off, transfer eggs immediately to ice water or run under cold water for 2 minutes to stop cooking and ease peeling.
  7. Peel eggs carefully under running water if needed. The whites should be firm but tender, yolks slightly runny.
  8. Spread a generous layer of mashed avocado on each toasted bagel half.
  9. Slice soft-boiled eggs in half lengthwise and place on top of avocado.
  10. Sprinkle everything bagel seasoning over the egg and avocado.
  11. Add a drizzle of olive oil and extra salt and pepper to taste if desired.
  12. Serve immediately while toast is crisp and egg warm.
