A quick and easy authentic Greek tzatziki sauce made with fresh cucumber, dill, and creamy Greek yogurt. Perfect as a refreshing dip or sauce for grilled meats and pita bread.

  • 1 cup (240 ml) full-fat Greek yogurt
  • 1 medium cucumber, peeled, grated, and drained (about 1 cup or 120 g grated)
  • 2 tablespoons fresh dill, finely chopped
  • 1 clove garlic, minced
  • 1 tablespoon freshly squeezed lemon juice
  • 1 tablespoon extra virgin olive oil
  • ΒΌ teaspoon salt, or to taste
  • Pinch of freshly ground black pepper
  • Optional: pinch of ground cumin

Instructions

  1. Peel the cucumber and grate it using the large holes of a grater to yield about 1 cup (120 g) grated cucumber.
  2. Place the grated cucumber in a fine mesh strainer or wrap it in cheesecloth and squeeze out as much water as possible (about 5 minutes).
  3. In a mixing bowl, add 1 cup (240 ml) of full-fat Greek yogurt.
  4. Mince 1 garlic clove finely and stir into the yogurt.
  5. Add 1 tablespoon (15 ml) freshly squeezed lemon juice to the yogurt mixture.
  6. Chop 2 tablespoons (about 8 g) of fresh dill leaves finely and add to the mixture.
  7. Drizzle 1 tablespoon (15 ml) of extra virgin olive oil into the bowl.
  8. Fold the well-drained grated cucumber gently into the yogurt mixture.
  9. Season with ΒΌ teaspoon salt and a pinch of freshly ground black pepper. Adjust seasoning to taste.
  10. Cover and refrigerate for at least 30 minutes before serving to allow flavors to meld.

Notes

Always drain the cucumber well to avoid watery tzatziki. Use full-fat Greek yogurt for creamier texture. Chill the sauce for at least 30 minutes before serving for best flavor. Optional: add a pinch of ground cumin for earthiness or substitute with coconut yogurt for a dairy-free version.
