  • 1 can (15 oz / 425 g) black beans, rinsed and drained
  • 1 can (15 oz / 425 g) sweet corn, drained
  • 1 cup (150 g) cherry tomatoes, quartered
  • 1/2 cup (75 g) red bell pepper, finely diced
  • 1/2 cup (75 g) green bell pepper, finely diced
  • 1/4 cup (40 g) red onion, finely chopped
  • 1 ripe peach, diced
  • 1 ripe mango, diced
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons fresh lime juice (about 1 lime)
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon honey or agave syrup
  • 1 garlic clove, minced
  • 1/2 teaspoon ground cumin
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup fresh cilantro, chopped
  • Optional: 1 jalapeño, finely diced

Instructions

  1. Rinse and drain the black beans and corn thoroughly to avoid excess moisture. Dice the red and green bell peppers, quarter the cherry tomatoes, finely chop the red onion, and mince the garlic. Dice the peach and mango into small, bite-sized pieces (about 1/2 inch cubes). If using jalapeño, remove seeds and dice finely.
  2. In a small bowl, whisk together the olive oil, fresh lime juice, apple cider vinegar, honey, minced garlic, ground cumin, salt, and pepper until well combined. Taste and adjust seasoning as needed.
  3. In a large mixing bowl, combine the black beans, corn, tomatoes, bell peppers, red onion, diced peach, mango, and jalapeño (if using). Pour the dressing over and gently toss with a spatula or spoon, being careful not to mash the fruit.
  4. Fold in the chopped cilantro right before serving to keep it fresh and vibrant. Toss gently to distribute evenly.
  5. Chill the cowboy caviar in the refrigerator for at least 30 minutes to let the flavors meld. Serve chilled or at room temperature with tortilla chips or fresh veggie sticks.

Notes

Use ripe but firm peaches and mangoes to avoid mushy texture. Drain beans and corn well to prevent watery dip. Add fresh herbs just before serving to keep them vibrant. Gently fold ingredients to keep fruit pieces intact. The dip tastes better after chilling for a few hours. Adjust spice level with jalapeño or smoked paprika as desired.
