A vibrant, rustic Greek village salad featuring heirloom tomatoes, cucumbers, olives, and feta cheese, dressed with olive oil and red wine vinegar. Quick and easy to prepare, perfect for summer gatherings.

  • 3 large heirloom tomatoes, sliced or roughly chopped
  • 1 medium cucumber, peeled and sliced into half-moons
  • Β½ small red onion, thinly sliced
  • Β½ cup Kalamata olives, pitted
  • 1 small green bell pepper, sliced into rings (optional)
  • 6 ounces feta cheese block, crumbled or chunked
  • ΒΌ cup extra virgin olive oil
  • 1 tablespoon red wine vinegar
  • 1 teaspoon dried oregano
  • Sea salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Rinse the heirloom tomatoes under cool water and pat dry. Slice into thick wedges or large chunks.
  2. Peel and slice the cucumber into half-moons about ΒΌ inch thick.
  3. Thinly slice the red onion and green bell pepper into rings.
  4. Optional: Soak the red onion slices in cold water for about 10 minutes to mellow sharpness, then drain well.
  5. In a large mixing bowl, combine the heirloom tomatoes, cucumber, soaked onion, green pepper, and Kalamata olives. Toss lightly to mix without breaking up the tomatoes.
  6. Crumble or cut the feta into large chunks and gently place on top of the salad.
  7. In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and freshly ground black pepper. Taste and adjust seasoning as needed.
  8. Drizzle the dressing evenly over the salad. Gently toss everything together just before serving.
  9. Sprinkle a little extra oregano on top and add a few whole olives or a wedge of lemon on the side for garnish.
  10. Let the salad sit for 5 minutes before serving to let flavors mingle.

Handle heirloom tomatoes gently to avoid mushiness. Serve immediately after dressing to prevent sogginess. Soaking red onion in cold water mellows sharpness without losing crunch. Use quality feta for best flavor. Dressing should be balanced and not overpowering.
