Instructions

  1. Prepare the Blueberry Compote: In a small saucepan, combine 2 cups blueberries, 1/4 cup sugar, 1/4 cup water, and 1 tablespoon lemon juice. Bring to a gentle simmer over medium heat. Stir occasionally, breaking down some berries with the back of a spoon. Cook until the mixture thickens slightly (about 10 minutes). Remove from heat and set aside to cool.
  2. Mix Dry Ingredients: In a large bowl, whisk together 1 1/2 cups flour, 1 tablespoon baking powder, 2 tablespoons sugar, and 1/2 teaspoon salt until evenly combined.
  3. Separate Eggs and Beat Whites: Carefully separate the egg whites and yolks into two bowls. Beat the whites with an electric mixer or whisk until stiff peaks form. Set aside the whites.
  4. Combine Wet Ingredients: In the bowl with yolks, whisk in 1 1/4 cups milk, 3 tablespoons melted butter, and 1 teaspoon vanilla extract until smooth.
