A fresh and vibrant peach salsa combining sweet peaches with spicy jalapeños and zesty lime, perfect for summer grilling, dips, and light meals.

  • 4 medium fresh peaches, peeled and diced
  • 12 jalapeños, seeded and finely chopped
  • 1 small red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey (optional)
  • Salt to taste
  • Pinch of black pepper
  • ½ teaspoon minced garlic (optional)

Instructions

  1. Prepare the peaches by scoring an ‘X’ on the bottom and blanching in boiling water for 30 seconds, then plunge into ice water to peel easily. Dice into ½-inch pieces.
  2. Slice jalapeños lengthwise, scoop out seeds for milder heat, then finely dice. Use gloves to avoid irritation.
  3. Finely dice the red onion. Rinse lightly under cold water if you want to mellow the bite.
  4. Roughly chop the fresh cilantro leaves and tender stems.
  5. In a mixing bowl, gently toss together the peaches, jalapeños, red onion, and cilantro.
  6. Add fresh lime juice, honey, salt, and black pepper. Stir gently to combine, keeping peach chunks intact. Taste and adjust seasoning as needed.
  7. Let the salsa rest for at least 15 minutes at room temperature or chill for up to 2 hours to allow flavors to meld.

Notes

Use firm but ripe peaches to avoid watery salsa. Removing jalapeño seeds reduces heat. Letting salsa rest enhances flavor melding. Avoid overmixing to keep peach chunks intact. Honey is optional and can be replaced with maple syrup or agave for vegan version.
