Flavorful Spicy Watermelon Margarita Popsicles

These popsicles combine sweet watermelon, tangy lime, tequila, and a hint of chili powder for a refreshing and spicy summer treat perfect for parties.

Ingredients

  • 4 cups cubed seedless watermelon (about 1 small-medium melon)
  • 1/2 cup (120 ml) tequila blanco
  • 1/4 cup (60 ml) fresh lime juice (about 2 large limes)
  • 2 tablespoons (30 ml) agave syrup
  • 1/2 teaspoon chili powder (preferably ancho or chipotle)
  • 1/4 teaspoon salt
  • Optional: pinch of cayenne pepper
  • Optional: splash of orange liqueur

Instructions

  1. Cut seedless watermelon into cubes, removing any seeds if necessary. Measure about 4 cups (about 600 grams).
  2. Add watermelon cubes, tequila blanco, fresh lime juice, agave syrup, chili powder, and salt into your blender.
  3. Blend on high for about 1 minute until the mixture is fully combined and smooth. Optionally, strain through a fine mesh strainer for a smoother texture.
  4. Taste and adjust by adding more chili powder or agave syrup if desired.
  5. Pour the mixture into popsicle molds, leaving a small space at the top for expansion. Insert sticks.
  6. Freeze molds for at least 6 hours or preferably overnight until fully frozen.
  7. To unmold, run warm water over the outside of the molds for a few seconds and gently pull out the popsicles.

Notes

Use ripe watermelon for best flavor. Adjust chili powder to control spiciness. Fresh lime juice is recommended. For a smoother texture, strain the puree. Avoid too much tequila to ensure proper freezing. Warm water helps unmold popsicles without melting.
