Ingredients

Scale
  • 12 medium fresh jalapeños, firm and bright green
  • 8 ounces (225g) cream cheese, softened to room temperature
  • 1 cup (100g) sharp cheddar cheese, shredded
  • 12 slices thin-cut bacon
  • 2 tablespoons honey (preferably raw or local)
  • 1 tablespoon packed brown sugar
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt (adjust to taste)
  • ¼ teaspoon freshly ground black pepper (adjust to taste)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and place a wire rack on top.
  2. Wearing gloves, slice each jalapeño in half lengthwise and carefully scoop out seeds and membranes to control heat.
  3. In a mixing bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or small cookie scoop.
  5. Wrap each filled jalapeño half with one slice of bacon, tucking the ends underneath to secure.
  6. In a small bowl, whisk together honey and brown sugar until smooth to make the glaze.
  7. Brush each bacon-wrapped popper lightly with the honey glaze using a basting brush.
  8. Place poppers on the wire rack-lined baking sheet and bake for 25-30 minutes until bacon is crisp and filling is bubbly. Halfway through baking, brush on another layer of honey glaze.
  9. Remove from oven and let poppers rest for about 5 minutes before serving.

Notes

Use gloves when handling jalapeños to avoid irritation. Softened cream cheese is key for smooth filling. The wire rack helps bacon crisp evenly. Brush honey glaze twice for best caramelization. If bacon browns too fast, tent with foil. For reheating, use oven at 350°F for 10 minutes to keep bacon crispy. Variations include swapping cheddar for pepper jack or goat cheese, using maple syrup instead of honey, or making vegetarian versions with smoked eggplant or plant-based bacon.
