  • 1/2 cup water
  • 1 tablespoon olive oil
  • 16 small corn or flour tortillas (Aldi’s Mission brand)
  • 1 small head green cabbage, shredded (or pre-shredded coleslaw mix)
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh lime juice
  • 1/4 cup chopped fresh cilantro
  • 1 tablespoon honey or agave syrup
  • Salt and pepper to taste
  • 1 cup Aldi shredded Mexican cheese blend
  • 1 cup sour cream or Greek yogurt
  • 1 cup fresh pico de gallo or Aldi fire-roasted salsa
  • 1 avocado, sliced or diced
  • Fresh jalapeños, sliced (optional)
  • Fresh lime wedges
  • Optional garnishes: chopped green onions, pickled red onions, hot sauce

Instructions

  1. Prep the Slaw (10 minutes): In a large bowl, combine shredded cabbage, sliced red onion, lime juice, chopped cilantro, honey, salt, and pepper. Toss well until evenly coated. Set aside to marinate while cooking the meat.
  2. Cook the Taco Meat (15-20 minutes): Heat olive oil in a large skillet over medium-high heat. Add ground beef, breaking it up with a wooden spoon. Cook until browned, about 6-8 minutes, stirring occasionally. Drain excess fat if needed. Sprinkle taco seasoning over beef and pour in 1/2 cup water. Stir, reduce heat to medium-low, and simmer 5-7 minutes until sauce thickens. Add more water if dry.
  3. Warm the Tortillas (5-7 minutes): Heat tortillas in a dry skillet over medium heat for about 30 seconds per side or wrap in foil and warm in a 350°F oven for 5-7 minutes. Keep warm in a clean kitchen towel.
  4. Prepare Additional Toppings (5 minutes): Slice avocado, chop green onions, and portion out cheese, sour cream, salsa, and garnishes.
  5. Set Up the Taco Bar: Arrange tortillas, meat, slaw, cheeses, and toppings in separate bowls or platters for self-serving. Place lime wedges and hot sauce nearby.

Notes

Do not drain fat too early to keep meat moist and flavorful. Slaw tastes best after resting at least 10 minutes or can be made hours ahead. Season taco meat gradually and taste before final seasoning. Warm tortillas using dry heat to avoid sogginess. Fresh lime juice brightens flavors. Leftovers store well separately; reheat meat gently with water splash.
