  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams)
  • 2 tablespoons olive oil (for brushing)
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1 cup mayonnaise (preferably Duke’s brand)
  • 1/4 cup apple cider vinegar
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon prepared horseradish
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Instructions

  1. Pat the chicken breasts dry with paper towels. Brush both sides lightly with olive oil. Season evenly with smoked paprika, garlic powder, salt, and black pepper.
  2. In a medium bowl, whisk together mayonnaise, apple cider vinegar, lemon juice, horseradish, Dijon mustard, sugar, salt, black pepper, and cayenne pepper if using. Taste and adjust seasoning. Refrigerate until ready to serve.
  3. Preheat grill to medium-high heat (around 375Β°F/190Β°C). If using charcoal, wait until coals are covered with white ash. Clean and oil grill grates lightly.
  4. Place chicken breasts on the grill and cook for about 6-7 minutes per side, flipping once. Avoid pressing down on the meat. Use a meat thermometer to ensure internal temperature reaches 165Β°F (74Β°C).
  5. Transfer grilled chicken to a platter and let rest for about 5 minutes to redistribute juices.
  6. Serve chicken warm with a generous drizzle of Alabama white BBQ sauce or serve sauce on the side for dipping.

Notes

Do not apply the Alabama white sauce during grilling to prevent the mayonnaise base from separating and burning. Use a meat thermometer to avoid overcooking chicken breasts. Sauce tastes better after resting for a few hours or overnight. For dairy-free version, use vegan mayonnaise and ensure horseradish is dairy-free. Fresh herbs like parsley or chives can be added to the sauce for extra freshness.
