These Easy Turkey and Cheese Pinwheel Lunchbox Roll-Ups are quick, delicious, and perfect for lunchboxes, road trips, or a fast snack. Made with simple ingredients, they convert even the pickiest eaters.

Ingredients

Scale
  • Large flour tortillas (burrito size), 4-6
  • 8 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup ranch dressing
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 810 slices deli turkey breast
  • 810 slices provolone cheese
  • Ranch dressing or honey mustard (for dipping, optional)
  • Fresh veggies (cucumber sticks, cherry tomatoes, carrot curls, optional)

Instructions

  1. Make the cream cheese spread: In a small mixing bowl, combine softened cream cheese, shredded cheddar cheese, ranch dressing, garlic powder, and onion powder. Mix until smooth and well-combined.
  2. Prepare your work surface: Lay a large flour tortilla flat on a cutting board. If cold, microwave for 10 seconds to soften.
  3. Spread the cream cheese mixture: Using a spatula or butter knife, spread an even layer of the cream cheese mixture over the entire surface of the tortilla, going all the way to the edges.
  4. Layer the turkey: Place 2-3 slices of deli turkey flat on top of the cream cheese mixture, overlapping slightly to cover the entire surface.
  5. Add the cheese: Lay 2-3 slices of provolone cheese on top of the turkey, overlapping slightly to cover the whole surface.
  6. Roll it up tight: Starting at one edge, roll the tortilla as tightly as possible, using your fingers to tuck and compress as you go. Press down gently to seal the seam.
  7. Wrap and chill: Wrap the rolled tortilla tightly in plastic wrap or parchment paper. Refrigerate for at least 30 minutes.
  8. Slice into pinwheels: After chilling, unwrap the roll and slice into 1-inch thick rounds using a sharp serrated knife with a gentle sawing motion.
  9. Serve or pack: Arrange pinwheels on a plate or pack in a lunchbox. Serve cold or at room temperature with optional dipping sauce.

Notes

For best results, use room temperature tortillas and chill the rolls for at least 30 minutes before slicing. The cream cheese spread can be made up to 3 days in advance. Uncut rolls can be frozen for up to 2 months.
