Easy Tangy Bread and Butter Refrigerator Pickle Chips

A quick and easy refrigerator pickle recipe that balances tang and sweetness with a crunchy texture, perfect for snacking or adding to sandwiches.

  • 4 medium Kirby or Persian cucumbers, thinly sliced into chips
  • 1 cup (240 ml) white vinegar
  • 1 cup (240 ml) water
  • Β½ cup (100 g) granulated sugar
  • 1 tablespoon (15 g) kosher salt
  • 1 tablespoon (about 9 g) mustard seeds
  • Β½ teaspoon (about 1 g) turmeric powder
  • Β½ teaspoon ground black pepper (optional)
  • 1 small yellow onion, thinly sliced
  • 2 garlic cloves, sliced (optional)
  • A few sprigs fresh dill (optional)

Instructions

  1. Wash the cucumbers well and slice them into ΒΌ-inch (6 mm) thick chips. Slice the yellow onion thinly. Transfer both to a mixing bowl.
  2. In a medium saucepan, combine 1 cup (240 ml) white vinegar, 1 cup (240 ml) water, Β½ cup (100 g) granulated sugar, and 1 tablespoon (15 g) kosher salt. Heat over medium heat, stirring until sugar and salt dissolve completely. Remove from heat and let cool slightly.
  3. To the warm brine, stir in 1 tablespoon mustard seeds, Β½ teaspoon turmeric powder, and Β½ teaspoon ground black pepper if using.
  4. Place the sliced cucumbers, onions, 2 sliced garlic cloves, and fresh dill sprigs into your glass jar. Press down gently but don’t crush.
  5. Pour the warm (not hot) brine over the cucumbers and onions, making sure everything is submerged. Leave about Β½ inch (1.2 cm) of headspace at the top.
  6. Close the jar tightly and place it in the refrigerator. Let the pickles chill for at least 24 hours before tasting.
  7. After 24 hours, open the jar and try a chip. Adjust brine or let sit longer if desired. Store in the fridge for up to 2 weeks.

Notes

Use fresh, firm cucumbers like Kirby or Persian for best crunch. Do not boil the brine vigorously; just warm enough to dissolve sugar and salt. Mustard seeds and turmeric add classic flavor and color. For less salty pickles, rinse chips under cold water before eating. Store pickles in the refrigerator to maintain crispness and prevent fermentation.
