These Easy Sunbutter and Jelly Pinwheels are a quick, 10-minute snack made with just four simple ingredients. Perfect for lunchboxes, after-school hunger, or any time you need a nut-free, crowd-pleasing treat.

  • 2 tablespoons sunbutter (sunflower seed butter), per tortilla
  • 1 to 1Β½ tablespoons jelly or jam (thicker varieties preferred), per tortilla
  • 1 large flour tortilla (burrito-size), room temperature
  • Optional: a sprinkle of cinnamon or a drizzle of honey

Instructions

  1. Start with room-temperature tortillas. Take tortillas out of the fridge about 10 minutes before starting, or microwave for 10 seconds to soften.
  2. Spread the sunbutter evenly. Using a butter knife or offset spatula, spread a thin, even layer of sunbutter over the entire surface of the tortilla, edge to edge. Use about 2 tablespoons per large tortilla.
  3. Add the jelly layer. Spread jelly or jam on top of the sunbutter, again going all the way to the edges. Use about 1 to 1Β½ tablespoons per tortilla. If jelly is thick, warm it in the microwave for 5 seconds to make spreading easier.
  4. Sprinkle any extras (optional). If adding cinnamon or honey, sprinkle or drizzle over the jelly layer.
  5. Roll it up tight. Starting at one edge, gently but firmly roll the tortilla into a tight log. Use fingers to keep the roll snug.
  6. Let it rest for a minute. Place the rolled tortilla seam-side down on a cutting board and let sit for about 60 seconds to help the layers set.
  7. Slice into pinwheels. Using a sharp serrated knife, slice the rolled tortilla into 1-inch rounds using a gentle sawing motion. You should get about 6 to 8 pinwheels per large tortilla.
  8. Arrange and serve. Place pinwheels on a plate with cut sides facing up. For later, store in a single layer in an airtight container with parchment paper between layers.

Notes

For best results, use room-temperature tortillas to prevent cracking. Let the rolled tortilla rest for a minute before slicing to help hold shape. If pinwheels seem loose after slicing, gently press them back into shape. For cleaner cuts, chill the rolled tortilla in the fridge for 10-15 minutes before slicing. Keep knife clean between cuts by wiping with a damp paper towel.
