Easy Small Batch Peach Jam with Vanilla Bean

A quick and approachable small batch peach jam recipe featuring fresh peaches and vanilla bean for a melt-in-your-mouth texture and balanced sweetness.

  • 2 cups fresh peaches, peeled and diced
  • 3/4 cup granulated sugar (150g)
  • 1 tablespoon fresh lemon juice
  • 1 whole vanilla bean, split and seeds scraped
  • 1/4 cup water (60ml)
  • Optional: pinch of pectin for firmer set

Instructions

  1. Prepare the peaches by washing and peeling them. Score a small ‘X’ on the bottom of each peach and blanch in boiling water for 30 seconds, then plunge into ice water. Peel skins off and dice into 1/2-inch pieces (about 10 minutes).
  2. Split the vanilla bean lengthwise and scrape out the seeds with the back of a knife. Set aside seeds and pod.
  3. In a medium saucepan, combine diced peaches, sugar, lemon juice, vanilla seeds, vanilla pod, and water. Stir gently to mix.
  4. Bring the mixture to a boil over medium heat, stirring frequently to prevent sticking. Reduce heat to medium-low and simmer gently, stirring every few minutes and skimming foam off the top. Cook for about 15-20 minutes until thickened.
  5. Test the jam set by placing a spoonful on a chilled plate. Let cool for a minute and push with your finger; if it wrinkles and holds shape, it’s done. If not, continue simmering and test every 5 minutes (total cooking time about 25 minutes).
  6. Remove the vanilla pod and spoon the jam into clean jars. Let cool to room temperature before sealing. Store refrigerated or freeze for longer shelf life.

Notes

Use ripe but firm peaches for best texture. Stir gently but regularly to prevent burning. The vanilla pod should be removed before jarring to avoid bitterness. The plate test is the best way to check jam set. Store jam refrigerated up to 3 weeks or freeze up to 3 months. Let jam rest for a day to deepen flavors.
