A simple, small batch fig jam recipe combining fresh figs, balsamic vinegar, and rosemary for a sweet-tart, herbaceous spread that’s perfect for beginners and ready in under an hour.

  • 1 pound fresh figs, washed and quartered
  • Β½ cup granulated sugar (100 g)
  • 2 tablespoons balsamic vinegar
  • 1 sprig fresh rosemary, finely chopped
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • ΒΌ cup water (60 ml)
  • Pinch of salt (optional)

Instructions

  1. Wash and quarter 1 pound of fresh figs. If figs are large, cut into smaller pieces to help them break down during cooking.
  2. In a medium saucepan, combine figs, Β½ cup granulated sugar, ΒΌ cup water, 2 tablespoons balsamic vinegar, and 1 tablespoon fresh lemon juice. Stir gently to combine.
  3. Place the saucepan over medium heat. Stir occasionally as the sugar dissolves and figs soften. After about 10 minutes, the mixture will bubble gently. Reduce heat to low to maintain a simmer.
  4. Stir in the finely chopped sprig of fresh rosemary. Let simmer for another 10-15 minutes, stirring frequently to prevent sticking. The jam should thicken and figs will break down.
  5. Test for doneness by placing a small spoonful on a chilled plate. Let cool for a minute, then push gently with your finger. If it wrinkles and holds shape, it’s done; if runny, cook longer and test again after 5 minutes.
  6. Remove rosemary sprig if desired. Transfer jam to sterilized jars or containers. Let cool to room temperature before sealing.
  7. Store the jam refrigerated and use within 2-3 weeks for best freshness.

Notes

Stir gently but often during simmering to avoid burning. Skim off any foam for clearer jam. Fresh rosemary is preferred over dried for best flavor. For smoother jam, pulse briefly with an immersion blender or use a potato masher. Small batches are forgiving and great for experimenting with sweetness and acidity.
