Easy Slow Cooker White Chicken Chili: Best Game Day Recipe

This easy slow cooker white chicken chili is the kind of recipe that makes you look like a hero with almost zero effort. You literally dump everything in a pot, walk away, and come back to a meal that tastes like you’ve been simmering it for days.

  • 1.5 lbs boneless, skinless chicken breasts (or thighs)
  • 1 (15 oz) can white beans, drained and rinsed (Great Northern or cannellini)
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chiles
  • 1 (10 oz) can green enchilada sauce
  • 1 cup low-sodium chicken broth
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 4 oz cream cheese, softened and cut into cubes
  • 1/2 cup sour cream
  • For garnish: fresh cilantro, shredded Monterey Jack cheese, diced avocado, sliced jalapeΓ±os, tortilla chips or strips, lime wedges

Instructions

  1. Place the chicken breasts in the bottom of your slow cooker.
  2. Drain and rinse the white beans and corn. Add them to the slow cooker on top of the chicken. Pour in the entire can of diced green chiles (with their juices) and the can of green enchilada sauce.
  3. Sprinkle the cumin, garlic powder, onion powder, salt, and pepper over the top. Pour the chicken broth over everything. Do not stir yet.
  4. Cover the slow cooker with the lid. Cook on LOW for 5-6 hours, or on HIGH for 3-4 hours, until the chicken is cooked through and shreds easily.
  5. Carefully remove the chicken from the slow cooker and shred it with two forks.
  6. Add the softened cream cheese cubes and sour cream to the hot liquid in the slow cooker. Whisk gently until the cream cheese is fully melted and the broth is smooth and creamy.
  7. Return the shredded chicken to the slow cooker. Stir everything together. Cover and cook on LOW for another 10-15 minutes to allow the flavors to meld.
  8. Taste and adjust seasoning as needed.
  9. Ladle the chili into bowls and top with desired garnishes.

Notes

For a dairy-free version, use dairy-free cream cheese and plain unsweetened coconut yogurt. For a gluten-free option, double-check enchilada sauce and broth labels. If chili is too thin, mash some beans against the side of the slow cooker or stir in a cornstarch slurry.
