Ingredients

Scale
  • 6 bone-in, skin-on chicken thighs (about 2 lbs total)
  • β…“ cup honey
  • ΒΌ cup low-sodium soy sauce
  • 6 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 tablespoon rice vinegar
  • Β½ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh parsley or green onions for garnish (optional)

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Position the rack in the middle of the oven.
  2. Pat the chicken thighs dry with paper towels. Season both sides generously with salt and black pepper.
  3. Heat a large oven-safe skillet over medium-high heat. Add the olive oil and let it get hot until shimmering.
  4. Sear the chicken thighs skin-side down in a single layer. Cook undisturbed for 5-6 minutes until the skin is deep golden brown and releases easily from the pan.
  5. Flip the chicken and sear the other side for 3-4 minutes. Transfer the chicken to a plate and set aside. Do not wipe out the pan.
  6. Reduce the heat to medium and add the butter to the same skillet. Once melted, add the minced garlic and cook for about 30 seconds, stirring constantly, until fragrant.
  7. Pour in the honey, soy sauce, and rice vinegar. Add the red pepper flakes if using. Whisk together, scraping up the browned bits from the bottom of the pan. Let the sauce simmer for 1-2 minutes until slightly thickened and glossy.
  8. Return the chicken to the skillet, skin-side up. Spoon some of the sauce over each thigh.
  9. Transfer the skillet to the preheated oven and roast for 20-25 minutes, or until the chicken reaches an internal temperature of 170Β°F (77Β°C).
  10. Remove from the oven and let the chicken rest in the pan for 5 minutes. Spoon the pan sauce over the chicken before serving.
  11. Garnish with fresh parsley or sliced green onions if desired.

Notes

Pat the chicken dry for crispy skin. Don’t rush the sear; let the skin cook undisturbed for 5-6 minutes. Watch the garlic closely to prevent burning. Let the chicken rest for 5 minutes before serving to allow the sauce to thicken. For extra sauce, make 1.5 times the sauce ingredients.
