  • 1 cup baby carrots, peeled
  • 1 cup baby potatoes, halved (Yukon Gold recommended)
  • 1 cup green beans, trimmed
  • 4 cloves garlic, minced
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and black pepper, to taste
  • 1 teaspoon smoked paprika (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 425Β°F (220Β°C).
  2. In a small bowl, combine melted butter, minced garlic, olive oil, dried thyme, smoked paprika, salt, and pepper. Stir until well mixed.
  3. Pat chicken thighs dry with paper towels. Season generously with salt and pepper.
  4. Toss baby carrots, halved baby potatoes, and green beans with half of the garlic butter sauce in a large bowl.
  5. Heat an oven-safe skillet over medium-high heat with a drizzle of olive oil. Place chicken thighs skin-side down and cook for 5-6 minutes until skin is golden and crisp. Flip and cook for another 2 minutes.
  6. Arrange the seasoned vegetables around the chicken in the skillet. Pour the remaining garlic butter sauce evenly over everything.
  7. Transfer the skillet to the preheated oven and roast for 20-25 minutes until chicken reaches an internal temperature of 165Β°F (74Β°C) and vegetables are tender and caramelized. Shake the pan gently halfway through cooking to turn veggies for even roasting.
  8. Remove from oven and let rest for 5 minutes. Sprinkle with fresh parsley before serving.
  9. Optional: Broil for 2 minutes if skin isn’t crispy enough, watching carefully to prevent burning.
