Instructions

  1. Preheat oven to 350Β°F (175Β°C). Line a 9×5-inch loaf pan with parchment paper.
  2. Peel ripe bananas and mash them in a large mixing bowl until mostly smooth with a few small lumps (about 1 Β½ cups).
  3. Add melted butter, sugar, egg, and vanilla extract to the bananas. Whisk until well combined.
  4. Add flour, baking soda, and salt to the wet mixture.
  5. Stir gently with a spoon or spatula until the flour just disappears. Do not over-mix.
  6. Gently fold in the chopped walnuts.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  9. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Use very ripe bananas for maximum sweetness and moisture. Do not over-mix the batter to avoid a dense texture. If the top browns too quickly, cover loosely with foil after 30 minutes. For dairy-free, swap butter for coconut oil. For gluten-free, use a 1:1 gluten-free flour blend.
