Ingredients

Scale
  • 1 cup (240 ml) nut butter (peanut butter, almond butter, or cashew butter)
  • β…“ cup (80 ml) honey, maple syrup, or agave nectar
  • 2 cups (180 g) rolled oats or quick oats
  • 2 tablespoons (15 g) unsweetened Dutch-processed cocoa powder (optional for chocolate version)
  • Β½ cup (60 g) chopped nuts and seeds (walnuts, almonds, sunflower seeds)
  • Β½ cup (60 g) dried fruits (raisins, chopped dates, dried cranberries)
  • 1 teaspoon vanilla extract (optional)
  • Β½ teaspoon cinnamon (optional)
  • Pinch of sea salt
  • Optional mix-ins: mini chocolate chips, shredded coconut, puffed rice

Instructions

  1. Gather Ingredients and Tools (5 minutes): Measure out nut butter, sweetener, oats, and any mix-ins like nuts or dried fruit.
  2. Mix Wet Ingredients (3 minutes): In a mixing bowl, combine nut butter and sweetener. Stir until smooth. Add a teaspoon of water or milk if mixture is too thick.
  3. Add Dry Ingredients (5 minutes): Stir in oats, cocoa powder (if using), nuts, seeds, and dried fruits. Mix until evenly coated and mixture sticks together when pressed.
  4. Press Into Pan (5 minutes): Line an 8×8 inch baking pan with parchment paper. Transfer mixture and press firmly into an even layer.
  5. Set at Room Temperature (10-15 minutes): Let the mixture rest until firm enough to cut. Use a cool spot if kitchen is warm.
  6. Cut and Serve: Slice into bars or squares with a sharp knife. Enjoy immediately or store in an airtight container.

Notes

Use room temperature nut butters for easier mixing. Measure sweeteners precisely to avoid too soft bars. Press mixture firmly into pan to ensure bars hold together. Adjust oats or nut butter if mixture is too sticky or dry. Store bars in airtight container at room temperature for up to 3 days or refrigerate up to a week. For warmer climates, store in a cool pantry or briefly refrigerate.
