Instructions

  2. Spoon about 2 tablespoons (30 grams) of the crust mixture into each mason jar. Press down gently with the back of a spoon to create a firm base. Set aside (5 minutes).
  3. In a large bowl, beat softened cream cheese with powdered sugar and vanilla extract until smooth and creamy using an electric mixer on medium speed (about 3 minutes).
  4. In a chilled bowl, whip the heavy cream until soft peaks form, being careful not to overwhip (3-4 minutes).
  5. Gently fold the whipped cream into the cream cheese mixture using a spatula to keep the filling airy and smooth (about 2 minutes).
  6. Spoon a generous layer of cheesecake filling over the crust in each jar, smoothing the top. Add a layer of sliced strawberries, followed by another layer of filling if the jar allows. Finish with a few strawberry slices on top for presentation (10 minutes).
  7. Refrigerate the parfaits for at least 2 hours before serving to let flavors meld and the filling set (minimum 2 hours, ideally overnight).
